This is a healthier alternative to the well-known revifokeftédes. Instead of frying them you bake them in the oven.
Ingredients: 1 kg chickpeas / 500 gr diced onion / 4 garlic cloves, well chopped / 15 gr chopped spearmint / ¾ cup Beliá Premium Olive Oil / 1 tsp ground cumin / 1 tsp ground paprika / 1 tsp ground coriander / ½ tsp ground nutmeg / 2 tsp curry / 2 tsp meat spice mix of your choice / 2 tsp dried oregano / 4-6 tbsp ground oatmeal flakes (turned into flour) / salt, white pepper / lemon juice / water
Begin by soaking the chickpeas overnight (at least 12 hours). Wash them well and then boil in salted water for approx. 40’ until they are tender, making sure to skim the water every so often. In the meantime, sauté the onion in medium heat until really soft (about 10’) and add the garlic. Sauté for another minute. Take of the heat and let it cool a bit. Add the spearmint and blend well.
Once the chickpeas are done, strain them (but keep aside some of the water) and add the olive oil and lemon juice. With a hand-held mixer (or a table top one) mash the chickpeas mix, a few at a time. If needed, add some of the water you kept aside to facilitate the process. After complete, salt/pepper to taste. Now add the onion mix and blend well. Now it is the turn of the oatmeal “flour”, add it and mix well one more time. And finally, add and blend all spices.
Cover the mix with a plastic wrap and refrigerate for 1-2 hours.
Preheat the oven (200°C) and start making the patties. You can make them round or flat, it is your choice. Lay a parchment paper on a tray and place the patties on top. Rinse them with some olive oil and bake for 20-25’.
Serve them with some yoghurt and lettuce or (if you made them flat) in burger buns instead of meat.
