Ingredients: 1/2 kg giant beans, 1 kg grated fresh tomato (flesh only) or canned chopped peeled tomato, 1 cup Beliá Premium Olive Oil, 1 large tomato cut in slices, 1 carrot, some chopped celery (leaves only), 1 large onion minced, 2-3 cloves of garlic chopped, 1/2 tsp sugar, salt/pepper
Let the beans soak in cold (this is important) water overnight. The next day boil them in fresh water (but keep 1 cup of the water you soaked them in, you will need it later on) until tender.
Using a strainer ladle, take off the beans and lay them in a Pyrex glass pan. Add to the beans and mix the grated tomato, olive oil, carrot, onion, celery, garlic, salt/pepper (to taste) and on top lay the sliced tomatoes. Bake in the oven (180°C) for approximately one hour. Keep an eye during this time, if you see them completely dry, add some water (not too much though) from the one you kept aside.
Serve warm or cold, with some Greek ouzo or tsipouro. Enjoy!!
